Easter is a time of celebration and all the great food just adds to the festive season. Below are some of our favorite Easter recipes that you can share with your families and friends.

Easter Egg Sugar Cookies

Who doesn't love a couple of sugar cookies on holidays!

Ingredients:
1 ½ cups sugar
1 ½ cups softened butter 
2 large eggs
2 tablespoons vanilla extract
4 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon cream of tartar
Ingredients for Frosting:
1 ½ cups powdered sugar
3 tablespoons softened butter 
1 tablespoon vanilla extract

Other food coloring
Colored sprinkles

Method:
Mix cream with sugar and butter in a mixing bowl until the mixture becomes fluffy.

Easter Egg Sugar Cookies

Now add eggs along with vanilla and beat the mixture well. Now add the other ingredients one by one to the creamed mixture and keep on beating until everything blends together properly. Now cover the mixture and chill it for around 30 minutes. Now lightly flour a surface and roll the dough to 1/4-inch thickness. Cut these into various shaped cookies as you like them. After this has been done, transfer the cookies to an ungreased cookie sheet. Now it's time to bake! Bake the cookies at around 350 º for around 10-13 minutes. When the baking is done, cook them on a wire rack.

As for frosting, mix all the ingredients together and if required, add milk to make the frosting thinner. At this moment if you want the cookies to be of specific color, you can add coloring. Finally spread the frosting over the cookies and decorate them if you want. The great thing about sugar cookies is that you can make it in every holiday as it is simple to make and everyone loves it.

Rhubarb Pie

Who doesn't love a fresh Rhubarb Pie! Here's how to make it:

Ingredients:

4 cups chopped rhubarb
1 1/3 cups white sugar
6 tablespoons all-purpose flour
1 tablespoon butter
1 recipe pastry for a 9 inch double crust pie

Method:
The first thing to do is preheat the oven to 450 ºF. Then combine the sugar and floor you have. Now sprinkle 1/4 of the over pastry in a pie plate. Heap the chopped rhubarb oven that mixture of sugar and floor. Once this is done, sprinkle the remaining salt and floor. The finally step before baking is to dot the pie with small pieces of butter and cover it with a top crust. Now, it's ready to bake.

The most important thing is that you should place the pie on the lowest rack in your oven.
Rhubarb Pie - Something different for Easter

Bake the pie at this condition for 15 minutes (the preheated oven). After this has been done, reduce the temperature of the oven to 350 degrees F and continue the baking process for 40 to 45 minutes. Ready to serve! You can either serve it warm or cold.

Ingredients:
1 (8 ounce) package sliced pepperoni
1 (8 ounce) package cream cheese
2 (10 1⁄8; ounce) packages Pillsbury Refrigerated Crescent Dinner Rolls

Method:
First of all take out the crescent rolls and separate them into individual triangles. Then flatten each triangle and slice them into three small triangles. Then cut pepperoni as well to really tiny pieces. Mix the pepperoni with the cream cheese. Stir this mixture really well so that all pepperoni pieces are thoroughly mixed into the cheese. Now, take a spoonful of that mixture and place it in middle of one of the crescent roll triangles. Pinch up the sides if you have to. Repeat this process till you has all you need and then bake them for around 11 minutes in 350 degree F. After it's cooked, let it cool for a while. Ready for serving!

Easter Glazed Ham

Ingredients:
1 5-pound fully-cooked, bone-in ham
1/4 cup maple syrup
1 tablespoon red wine vinegar
2 tablespoons Dijon mustard
1 tablespoon dry mustard

Method:
The first thing to do is preheat the oven to 325° F. Score the outside of the ham in a diamond pattern with a sharp knife, making shallow cuts about 1 inch apart. Place in a roasting pan., and roast for 30 minutes.

In a small bowl, mix together the maple syrup, red wine vinegar, Dijon mustard, and mustard powder. After 30 minutes are up, brush 1/3 of the glaze over the ham. Bake 20 more minutes, and repeat another 2 times with remaining glaze.

Allow to cool for 15 minutes, and serve.

Garlic Prime Rib for Easter

Ingredients:
1 (10 pound) prime rib roast
10 cloves garlic, minced
2 tablespoons olive oil
2 teaspoons salt
2 teaspoons ground black pepper
2 teaspoons dried thyme

Method:
Heat the roasting pan and place the roast with the fatty side up. Now, mix garlic, olive old, salt, pepper and thyme in a small bowl. Then spread the mixture over the fatty layer of the roast and cool it until it is at room temperature but not for more than 1 hour.
Bake the roast in a preheated oven (500 degrees F) for about 20 minutes. Then reduce the temperature to 325 degrees F and continue the roasting process for another 60-75 minutes such that the internal temperature of the roast is 145 degrees F.

Let the roast to cool for around 10 or 15 minutes and then carve the meat so that it can regain all its juices.

Carrot and Pineapple Easter Cake

There's nothing like a great dessert after a great meal and what else would be better than a carrot pineapple cake!

Ingredients:

2 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
2 teaspoons ground cinnamon
1 3/4 cups white sugar
1 cup vegetable oil
3 eggs
1 teaspoon vanilla extract
2 cups shredded carrots
1 cup flaked coconut
1 cup chopped walnuts
1 (8 ounce) can crushed pineapple, drained

1 (8 ounce) package cream cheese
1/4 cup butter, softened
2 cups confectioners' sugar
Carrot Pineapple Cake

Method:
First of all preheat oven to 350 degrees F. Then grease and flour a 9X13 inch pan (recommended according t the amount of ingredients taken). Now mix the flour with baking soda, baking powder, salt and cinnamon. Make a well in the middle of the mixture and add sugar, oil, eggs and vanilla. Now, mix with a wooden spoon until the mixture is smooth and then stir in carrots, coconut, walnuts and pineapple.

Pour everything in the pan and bake at 350 degrees for about 45 minutes. You will notice the center sink a bit. Just allow it to cool.

For the frosting, cream the butter with cream cheese until the mixture is smooth. Then add the confectioners' sugar and beat the mixture until it's creamy. Ready to serve!

Spinach and Strawberry Salad

It just takes few minutes (around 5-10 minutes) to prepare and is a great dish to serve. ( It is also a good one to make at Christmas time because of its red and green Christmas Colors)


Ingredients:
2 bunches spinach, rinsed and torn into bite-size pieces
4 cups sliced strawberries
1/2 cup vegetable oil
1/4 cup white wine vinegar
1/2 cup white sugar
1/4 teaspoon paprika
2 tablespoons sesame seeds
1 tablespoon poppy seeds

Method:
Take a large bowl and toss together all the spinach and strawberries.

In a medium bowl, whisk oil and vinegar with sugar, paprika, sesame seeds and poppy seeds.

Pour all the ingredients from the large bowl to the medium one. Ready to serve!

Chocolate Hot Cross Buns

Chocolate Hot Cross Buns are great for the kids (and adults) that dont like the spice and mixed fruit in traditional Hot Cross Buns. These are great served warm by themselves, with butter or a chocolate hazelnut spread.

Leftover Chocolate Hot Cross Buns can be heated up the next day in the microwave (about 20 seconds should be enough - be careful not to overheat ) or for a crispier result in an oven. They can also be cut up and made into a delicious "Chocolate Hot Cross Bun and butter " Pudding - just substitute Hot Cross buns instead of bread with your favorite bread and butter pudding recipe. (Spread hazelnut spread instead of butter on the buns for a really yummy pudding.)

1 1/2 cups warm milk
2 x 7g sachets dried yeast
Pinch of salt
4 cups plain flour
1 tablespoon cocoa
1/4 cup sugar
1/2 teaspoon cinnamon
60g butter, melted
1 egg, lightly beaten
1 cup chocolate chips
1/3 cup water
60g cooking chocolate
(for cross on top of buns)

Chocolate Hot Cross Buns - Place into a lightly oiled bowl and cover with plastic wrap. Set aside in a warm place for up to 1 1/2 hours or until the dough doubles in size.

Chocolate Hot Cross Buns - Divide mixture into 12 and place in a warm spot away from drafts.
Divide dough into 12 even portions and shape into balls. Place into a lamington pan lined with baking paper about 1cm apart. Cover with plastic wrap. Set aside in a warm place for 30 minutes or until buns double in size.
Chocolate Hot Cross Buns - are a yummy alternative to traditional Hot Cross Buns
Melt the cooking chocolate in the microwave in a small bowl on low heat and then spoon into a snap-lock bag. Snip a corner off bag (not too big) and pipe chocolate crosses over buns. (For something different use a chocolate hazelnut spread for the crosses on the buns. )
Chocolate Hot Cross Buns - Serve with a Chocolate Hazelnut Spread for something different at Easter.
Serve Chocolate Hot Cross Buns warm or at room temperature.

1) Combine milk, yeast, salt and a pinch of sugar in a bowl. Whisk together until combined. Cover with plastic. Place in a warm place for 5 to 10 minutes or until the top becomes frothy.

2) Sift flour, cocoa and cinnamon together into a large bowl. Add 2 tablespoons of sugar (the remainder of the sugar will be used in the glaze), yeast mixture, butter and egg. Stir with a wooden spoon until dough almost comes together. Mix to a soft dough with your hands. Turn onto a lightly floured surface and knead for 10 minutes or until dough is smooth. Place into a lightly oiled bowl and cover with plastic wrap. Set aside in a warm place for up to 1 1/2 hours or until the dough doubles in size.

3) Punch dough down to its original size with your fist. Add chocolate chips and knead until well combined. Divide dough into 12 even portions and shape into balls. Place into a lamington pan lined with baking paper about 1cm apart. Cover with plastic wrap. Set aside in a warm place for 30 minutes or until buns double in size.

4) Preheat oven to 200°C. Bake buns for approx. 20 minutes or until a skewer inserted into the centre of one of the buns comes out clean.

5) To make the glaze heat water and remaining 2 tablespoons sugar in a small saucepan over low heat, stirring until sugar dissolves. Bring to the boil and then boil for 5 minutes. Brush warm glaze over warm buns.

6) Chocolate cross - Melt the cooking chocolate in the microwave in a small bowl on low heat and then spoon into a snap-lock bag. Snip a corner off bag (not too big) and pipe chocolate crosses over buns. For something different use a chocolate hazelnut spread for the crosses on the buns.

7) Serve Chocolate Hot Cross Buns warm or at room temperature.

Golden Nests with Chocolate Easter Eggs

These nests are quick and easy to make for a last minute treat for the kids. You can find a great variety of eggs to put in the nests - chocolate speckled eggs, filled chocolate eggs or we have used some brightly colored foil wrapped chocolate eggs.

1/3 cup sugar
1 tablespoon honey
3 tablespoons butter or margarine
4 cups corn flakes
Easter Eggs

1) Place 12 muffin size paper cases in a muffin tray
2) Melt butter, sugar and honey together in a saucepan. Remove from heat when it gets frothy.
3) Pour mix into a bowl with the corn flakes and stir until combined.

4) Place large spoonfuls into paper cases pushing the mixture with the back of the spoon to the edges to form a hollow. You may need to slightly crush the cornflakes with your fingers by lightly pressing in the middle to make enough room to place the easter eggs.
5) Bake in a slow oven for 10-15 minutes.
6) Cool
7) Arrange a few eggs in each nest.

Place large spoonfuls into paper cases pushing the mixture with the back of the spoon to the edges to form a hollow

Chocolate Nests with Chocolate Easter Eggs

These chocolate nests are quick and easy to make for the kids. The nests can be made with dark, milk or white chocolate. Fill the nests with chocolate speckled eggs, filled chocolate eggs or we have used some brightly colored foil wrapped chocolate eggs.

1 packet fried noodles
200g melted dark or milk chocolate
2 tablespoons of peanut butter
Easter Eggs

1) Lightly grease a 12 muffin tray
2) Melt chocolate on a low heat in the microwave and stir in peanut butter.
3) Pour chocolate mix into a bowl with the fried noodles and stir until combined.

4) Place a spoonful on one side of the muffin tray and then another on the other side making a hollow in it as you go. You may need to get your fingers into it to get the nest shape.
5) Place in the fridge until set.
6) Using a teaspoon pry them out of the muffin tray
7) Arrange a few eggs in each nest.

Chocolate Easter Egg Nests

Hot Cross Buns
A hot cross bun is a small, sweet bun with a cross. The ingredients you will need to make this are:

Hot Cross Buns

30 grams compressed yeast
1 1/2 cups milk
60 grams butter
1 egg, beaten
4 cups plain flour
1 teaspoon salt
1/4 cup sugar
1/2 teaspoon mixed spice
1/2 teaspoon cinnamon
60 grams sultanas
30 grams currants

1) Cream yeast in a small bowl with 1 teaspoon each of the sugar and flour, add warm milk, mix well. Cover, stand in a warm place for about 15 minutes or until frothy.

2) Sift flour, salt, sugar and spices into a large bowl. Rub in butter, add egg, sultanas and yeast mixture, beat well with a wooden spoon. Cover bowl with a tea towel and stand in a warm place for about 40 minutes or until dough is doubled in size. Punch dough down, turn onto a floured surface and knead for about 5 minutes or until the dough is smooth.

3) Cut into 16 pieces kneading each into a round shape. Place onto a greased square pan and stand in a warm place for about 15 minutes or until buns reach the top edge of the pan.
4) Bake in a hot oven for 20 minutes.

5) To make the glaze - heat 1/3 cup water and 2 tablespoons sugar in a small saucepan over low heat, stirring until sugar dissolves. Bring to the boil and then boil for 5 minutes. Brush warm glaze over warm buns.

6) Crosses - Mix a little milk with 1/2 cup icing sugar, then brush on buns to make crosses.

Ham is popular at Easter time

Easy Easter Ham 

Ham is a traditional Easter meat that can form the centrepiece of an easy-to-fix meal. After that exhausting effort of hiding and finding eggs, opening gifts from Easter baskets, and enjoying family activities, an easy dinner will be appreciated by the cook. 

A 6-pound ham takes a while to cook, but is ultra-easy to prepare. Pre-heat the oven to 175C/350F. Place the ham in a shallow pan and then bake for about one and a half hours (1 1/2hrs). This should serve 12.

 Here's a great apple chutney recipe to go with the ham:

Apple Chutney

Ingredients:
3 green apples
1/2 red bell pepper
1 poblano chile
2 jalapeno chiles
2 cups rice wine vinegar
3/4 cup brown sugar
2 tbsp lemon juice 

Peel, core and dice the apples, then dice the bell pepper and chile peppers. 

In a large saucepan bring the vinegar to a boil and stir in the brown sugar until it is dissolved. Add the chile peppers and bell pepper. Boil for about 8 minutes. Add the apples and simmer until they are tender, but not mushy. 

Remove from the heat and stir in the lemon juice. Cover and refrigerate for at least one hour. Then remove and allow to warm to room temperature to serve.

Roast Lamb at Easter

Roast lamb is another favourite of the Easter holiday, and almost as easy to prepare.

Ingredients:
7 lb leg of lamb still on the bone
1/4 cup fresh lemon juice
8 cloves of minced garlic
3 tbsp chopped fresh rosemary leaves
2 tsp coarsely ground black pepper
1 tbsp salt 

Preheat the oven to 200C/400F. 

Rub the lemon juice over the leg of lamb. Evenly sprinkle on the garlic and rosemary and then shake the salt and pepper over the surface. Place in the oven on the middle rack and cook for 30 minutes. Then reduce the temperature to 175C/350F and cook for another hour. 

You can test the lamb by using a meat thermometer. It should read around 65C/150F.

While the meat is standing, you can prepare the sauce.

Ingredients:
1 cup combination of chives, rosemary and parsley
2 cups chicken stock
1 cup red wine 

Remove the lamb from the roasting pan to use for the sauce. Pour the wine and chicken stock into the pan and warm over a medium stove and stir to combine with the lamb drippings. Pour the sauce over the lamb and you're ready to go!
